Recipes for Alberta’s Asparagus Season

We are pleased to bring you two of our favourite recipes for Alberta’s Asparagus Season. It’s a short six weeks of asparagus heaven so eat it fresh while you can.

Are you as sad as we are when the season is over? Take heart. This first recipe for Creamy (no cream) Asparagus Soup freezes beautifully. Find bags of “seconds” or imperfect spears and use them to make this soup. You’ll save money and no one will every know they weren’t perfect. They taste every bit as great.

The second recipe is great along side lamb, a grilled steak, or salmon. This recipe for  Cold Asparagus Salad with Sesame Ginger Vinaigrette is one that I made for a visit to Edgar Farms in Innisfail. We ate it in the field, surrounded by growing asparagus, with some freshly barbecued Alberta Lamb. It was heaven. I do hope you’ll try it.
