Weather is not a factor as we are snug and warm inside the castle.

Your tour guide will greet you at STOCK Food and Drink in the main lobby of the Fairmont Banff Springs Hotel. We’ll have a reserved table either inside or (weather permitting) on the terrace. This will be two VERY happy hours and we’ll get the tour started with refreshments right away while also taking a sneak peak into how the hotel sources some “mile zero” ingredients year round despite living in a winter zone six months a year.

The tour progresses into the heart of the hotel for fine French Brasserie fare at the newly refurbished Vermillion Room. We’ll visit Grapes Wine Bar and 1888 Chophouse before they open to the public and be treated to exquisite house made ingredients.

Access to the ultimate in a luxurious lifestyle with our exclusive two hour food and beverage pairing tour.

STOCK food and drink

Mile zero micro greens, house made sourdough and house smoked meats make for a great introduction to the secrets of the castle's larder.

The Vermillion Room

Completely refurbished and inspired by French Brasserie cuisine, we'll nosh a classic dish and beverage pairing here.

Grapes Wine Bar

Famous for house-cured meats and pickles, the sommelier has picked out the perfect accompaniment for us to sip and savour - of course!

1888 Chophouse

Only the best. Only the freshest. We'll be enjoying something completely Alberta here - a true delicacy of the region.
